Breakfast cookies (networking cookies)

Yes, cookies for breakfast. These are fat free, refined sugar free and have fruit and oats to give you both a quick boost to get you going and sustained energy for the morning ahead. I took them to a morning networking meeting where they went down a treat. Don’t worry, if you don’t like bananas, you can’t taste it.

Breakfast cookies

Makes 15-18


1 cup oats

1 cup plain flour (all purpose). You can use white or wholemeal/wholewheat.

1/2 teaspoon bicarbonate of soda (baking soda)

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/4 cup raisins

1/2 teaspoon vanilla extract

1/2 cup date or maple syrup (I used date. If you use maple syrup, the cookies will be paler in colour)

1 over ripe banana

1/2 teaspoon lemon juice

1 egg

Preheat the oven to 190C/170C fan/Gas Mark 5/375F. Grease a baking sheet.

Mix the dry ingredients together and stir in the raisins.

Mash the banana and add with the rest of the ingredients to the dry mix. Combine well.

Drop heaping tablespoons onto the baking sheet and flatten each slightly with a fork.

Bake for 8-12 minutes. Cool on a wire rack.
